About Our Farm

Our Story
Birchrun Hills Farm is a family-owned, first-generation dairy farm and creamery nestled in the highlands of northern Chester County, Pennsylvania. Founded by Sue and Ken Miller, and operated alongside their sons Randy and Jesse, we oversee every step of our farm-and-cheese journey — from raising our herd and growing feed, to crafting cheese and aging it in our underground caves. Our Roots
Although Sue and Ken have been farming for decades and practicing regenerative agriculture for over 30 years, the turn toward cheesemaking came in 2006 when volatile milk markets made it increasingly difficult to sustain the dairy simply by selling raw milk. Sue took a cheese-making class with PASA (Pennsylvania Association for Sustainable Agriculture) and realized that value-added dairy (cheese) could be the way forward. centerfordairyexcellence.org+2science. craft. cheese.+2
What Makes Our Cheese Special

Milk quality is at the heart of everything. Our herd of ~80 Holstein cows is raised on high-forage diets, pasture when possible, and feed that we grow ourselves. Our farm layout supports the process: the creamery sits downhill of the dairy barn so we can gravity-feed milk, minimizing disturbance to fat globules and preserving its natural character. centerfordairyexcellence.org

Our cheeses are handcrafted on site, using both raw and pasteurized milk depending on the style. We work multiple cheeses in process at once, five days a week. Our cheeses are regularly featured in local and regional restaurants and shops; in media covering Philly’s food scene, artisan cheese in Pennsylvania, and the Main Line region.
