How to Care for Your Cheese
Birchrun’s Cheese Care 101
- Keep cheese wrapped in the specialty paper that it comes wrapped in or use wax paper
- Do not wrap cheese directly with plastic or saran wrap
- For best quality, consume or cook soft, bloomy-rind or fresh styles of cheese within 10 days of purchase
- For enjoy aged or washed rind cheeses, consume or cook within 14-20 days of purchase for best quality
- Washed rind cheeses (red and fat cat) are little stinkers and often get uncomfortable or constricted in their paper. Open and allow to breathe for the best flavor
- For the most flavor, serve cheese at room temperature
- Keep cheese stored in the fridge until 30 minutes before you plan to serve it
- If some mold develops on the paste of the cheese please trim or scrape it off and enjoy the rest of the wedge
