Two cheeses fresh from the make room this week. Here's what's in your share and how to make the most of it.

Halloumi

Pasteurized Greek Classic

A Greek classic, made with our pasteurized milk. Halloumi is firm and springy, with a gentle salt and a squeak.

Grill it or pan-fry it before enjoying. It'll sear to a golden crust on either side but hold its shape. This one won't totally melt, which is exactly what makes it so good.

Try it with

Honey and thyme, watermelon and basil, or any other summer delight you've got on hand.

Powder Mill

Pasteurized Aged 3 Weeks

Our take on a French Valençay, made with our cows' milk. It comes to you as a pyramid under a dramatic ashen, bloomy rind, and that rind is edible, so no need to trim it.

Inside it's velvety soft and tangy, with notes of dry grass and sweet cream. This is our favorite cheese to gift, or to set out on a cheeseboard at a gathering.

Try it with

Maine Crisp crackers, Effie's Oatcakes, a glass of sauvignon blanc, raspberries or blackberries, and fresh figs with honey.
